Why Does The Yeast Shortage Keep Bubbling Up in Conversation Lately?

Rise to the occasion and create your own healthy version of “Pandemic Sourdough Starter” for Bread Making.

Has your search for yeast recently fallen flat? Suppliers are having a hard time keeping up with demand it seems. So, why not capture your own yeast? Create your own sour dough starter for artisan bread that you and your family will love! I interviewed my favorite baker for the details on creating your very own unique sourdough starter. Here is what he said!

You will need: a bowl or container big enough to hold 2 quarts, aluminum foil or a loose fitting lid of some type, rye flour–not bleached (Hodgson Mill Stone Ground Rye Flour works well,) general purpose white flour.

Combine about 1 cup rye flour, 1/4 cup general purpose white flour, and 2/3 cup room temperature water. Stir. Cover. Set bowl aside on counter for 2 days. Then stir well and take out 1/2 cup of the mixture and dump the rest out. Dump the 1/2 cup of mixture you just removed back in your container or bowl and add 1 cup general purpose white flour and 1/2 cup room temperature water. Stir. Then, once a day for the next five days or so repeat, Keep 1/2 cup of the mixture, dump the rest, add 1 cup white flour and 1/2 cup room temperature water and give it a stir. Remember to always stir before removing the 1/2 cup of mixture. You should see bubbles after about the third day. (You probably won’t see much of anything from the rye flour as it is not sticky enough to hold bubbles.) After six days your starter should be ready.

If you want a speedier process, after day three you can repeat the feeding process every 12 hours if you would like. After four or five days your mixture will double in volume within 4 hours after feeding .

To make Artisan Bread: Use 1/2 cup starter, 2 cups white all purpose flour, 1 cup water, 1/2 tablespoon salt for 1 loaf. Or, 1 cup starter, 4 cups general purpose white flour, 2 cups water, 1 tablespoon salt for 2 loaves. If you use 2 cups general purpose white flour and 2 cups bread flour your bread will have a chewier texture because bread flour is made from Hard Winter Wheat (aka Red Wheat) which contains more gluten/protein.

Mix starter and water in bowl and beat with mixer. Dump flour on top and stir with a butter knife until ragged looking. Once mixed, dump mixture in another bowl. Clean first bowl and wipe sides with Crisco and dump mixture back in first bowl and cover. Reminder, your mixture will expand. Wait 1 day. Heat oven to 450 degrees. Then take 2 squares of aluminum foil and wipe with Crisco and dust with flour. If you are making 2 loaves, dump 1/2 mixture on each square of foil. Dump all of your mixture on an aluminum foil square if making 1 loaf. Gather corners of foil and lightly twist on top to keep dough from spreading out like a pancake. Heat Dutch Oven or cast iron pot in oven with lid off kettle but both pot and lid in oven. Heat at 450 degrees until hot. Place one dough filled packet in pot, put lid on and bake with lid on for 25-30 minutes. Remove lid and bake for about another 10 minutes. Repeat for second loaf.

For regular bread, knead and then let rise in greased bread pan until about 1 inch below edge of pan. The baker being interviewed likes to cover the bread pan with the dough in it with another empty greased bread pan flipped upside down. The kneading will give your bread a finer texture. The less you work your dough the more rustic the finished product.

Store your cooled bread in a brown paper lunch bag or in the foil you baked it in.

Store your starter in the fridge if you are not using it a lot. Feed it a 2:1 ratio of white flour to water every 2-3 days. To maintain consistent volume keep 1/2 cup starter and add 1 cup flour and 1/2 cup water with each feeding. The more fridge time the more sour your starter will be. Storing your starter at room temperature will make for a more mild flavor starter but you have to feed it more.

Forgot about your starter? No worries. Your starter will end up with liquid gullies of clear or yellow fluid on top. Just stir and go back to your normal feeding routine. If it turns green or black then throw it out.

Rye flour is ground in a way that retains wild field yeast on it in a balance with natural bacteria that will take off in a rowdy sourdough starter for you. Enjoy and thank you for taking time to read this!

Are You Moving Forward With Your Health and Wellness or Slipping Backwards?

I sometimes hear people say the are “on a break” from their diet and exercise plan. Good health choices have become a struggle and they are backing off for a bit. Can you take a break? That’s the question I am asking you today. In this fast flowing river of life, can you really slip in to an eddy and remain unchanged? I’m not sure. Do the swirling waters around you continue to shape you even though you are relaxing in an eddy? Maybe “taking a break” is making a decision not to think about your wellness plan. You continue to get twirled around like a stick in a river eddy while the eddy continues to shape and redirect you and have it’s way with you. Maybe, if you are not moving forward with your health and wellness plan you are actually moving backward. Maybe it’s more about pacing yourself for the long haul and continuing the wellness journey even if you are not sprinting. Maybe it’s just continuing to put one foot in front of the other to just keep taking those steps, big or small, towards your end goal.

I challenge you today to make mindful choices towards your end goal. Stay the course. Follow the plan. Get your head in the game. Schedule in your activity for this coming week and mindfully plan out your meals. Your body was designed to move and eat clean. Set yourself up with a SMART goal this week and reward yourself when you reach you goal. It’s important. You are important. Take care of yourself.

Living in the Space Between the Earthquake and the Tsunami.

Coronavirus, or COVID 19 as it is sometimes called. I never thought I would be writing about this when I started my health and wellness blog back in January 2020. Coronavirus, “Originated in bats, then jumped to an intermediary species — most likely pagolins, pigs, or civets — that passed it to people,” according to Business Insider. On New Year’s Eve 2019, Chinese Health officials informed the World Health Organization about a group of 41 patients with a unique type of pneumonia. Most were associated with the Huanan Seafood Wholesale Market in the city of Wuhan, China. It is likely that the virus started spreading as early as November 2019. To date there are 1,258,198 know cases worldwide of COVID 19. From zero to over a million in less than 4 months–all around the world. That’s scary and we are in a world of hurt.

It’s likely, from the numbers that I have seen, that this week or more likely next week we will be heading straight in to the thick of it. At least where I live in rural northern Wisconsin. As a nurse, it’s like living in the space between the earthquake and the tsunami. Maybe it will manifest as a wave running along the shoreline, or, maybe it is going to sweep over us and take away parts of our lives as we know them changing us forever. I’m finding my inner peace these days in sunsets, birds singing, and spring flowers blooming. I can feel myself turning inward, mustering strength. And, I know that life will go on after COVID 19.

I pray for each of you and for this broken world to heal. May we hug longer, squeeze tighter, and say “I love you” more now and after this pandemic has passed over us. May we come out of this stronger and more resilient. May we slow down and live in the moment from now on, treasuring sunrises and sunsets, the smell of a fresh rainfall, the bright blue color of the sky. Hold on tight, drive hard and head straight into this thing. Let us glean whatever life lessons we can from this as it rolls over us. Make your best decisions. Stay strong. Stay focused.

Follow The Plan

Ever since I met my husband of almost 40 years now, whenever we journeyed through our darkest of times, he would just look over at me and say “What we are going to do here is follow the plan.” Awash in my own self imposed fears and self made obstacles, virtually incapacitated at times by surrounding circumstances, “follow the plan” has become my mantra, my life line, and my anchor as I am being tossed about in the fallout of the COVID 19 pandemic. I am a nurse still going in to work. I am scared, but, I know my plan and I know my goal. I will make the best possible choice for my own health at every turn through this pandemic. I will come out of this strong and be a positive force in this sometimes seemingly crazy world.

Follow your plan, whatever it is. Write it down. Write your goal down. Remember it. Let it resonate. Let it be your lifeline for you to hang on to and guide you when your vision is obscured as this storm washes over us. Acknowledge that it is hard. Acknowledge that it is scary. Know that you will come out on the other side. Be strong. Have hope.

Thoughts on Staying Connected and Moving Forward in the Midst of the COVID 19 Pandemic.

After a relatively peaceful night’s sleep last night I awoke to the rays of sunshine peeking from behind my window shade. My body felt relaxed and my spirit renewed. Then, I was hit by the jolt of “Wait, I’m in the middle of a pandemic. What does this mean for me today.”

The truth is, the pandemic means nothing for me today other than I am not running out on my usual unorganized and unnecessary trips to town. I am catching up on my ordinary household tasks and getting ready to head in to the work week ahead of me as a nurse at a local hospital. My family, friends, and I are all well. We have the basic necessities. Today I was gifted with another new day.

Today I am staying in this moment. I am staying connected with family by video chatting. I am planning a virtual family dinner Tuesday evening using ZOOM. I am grateful for social distancing and the choices to promote good health that I can make take today.

Today I will not fall in to the craziness of COVID 19. I will live in this moment and not let this time be stolen from me. I will continue to plan and set goals. I will breath in the magic that is my life.

Wellness Contingency Plan

Alright. Now that we are hunkered down and our hands are chapped from all the hand washing, what’s your real plan to stay healthy? I’m talking about your diet and exercise plan. You may no longer want to be going to the gym or doing any kind of group exercise as you did before. It is likely that you have decided to cut down on your trips to the grocery store as well. It’s time to have your “Plan B” ready. Exercise is still one of the best ways to give your body a fighting chance against many illnesses. Simply put, your body was made to move. Get in at least your 30+ minutes of moderate activity a day to boost your immune system. Get that blood pumping, lymph circulating, lungs expanding–preferably with fresh outside air! Drink your water, take your vitamins, get some sunshine, eat healthy! Give your body a fighting chance to work it’s own magic.

You have landed here on social media but limit your time here and with the news in general. You don’t need the TV 24/7 News Channel streaming the world’s news into your living room. It’s mentally toxic. Remember, every cell in your body reacts to what’s being processed in your brain. Kind of like a school of fish swimming and darting about in unison reacting to a dangerous predator. Your body only knows what your mind communicates to it. Fill your mind with good things. It just makes sense. Read a good book, engage in a hobby, spend time outdoors. Be kind to yourself.

My hope for you is that you stay healthy through this pandemic and that you treat yourself and others well. Be your own best friend. Thank you for spending time with me and we will chat again next week!

The Skinny on Hand Washing in Public Restrooms

Have you ever gone into a public restroom, looked around to observe how clean it is, and then wondered if you are farther ahead washing your hands or not washing your hands? To be honest, sometimes I am not sure! I will share a few tips with you which I have picked up over the years as a registered nurse. I am assuming that you have already flushed the toilet with your foot, correct?

First of all, yes, wash those hands! Especially now that we are in the midst of the flu season and the COVID 19 spread! Wet your hands, soap up, and wash through two of your favorite renditions of “Happy Birthday.” Friction is your friend and the viruses enemy. Wash the tops of your hands too and don’t forget between the fingers! Rinse under running water with the water running down off your fingertips and down the drain. Grab your paper towel next and dry them off. Don’t shake them and send germs flying everywhere! Use your towel to turn off the faucet and again to open the door. Then, with the door open, toss the paper towel in the garbage. If the garbage is on the other side of the bathroom then throw the paper towel on the floor and shame on them!

Weight Loss SMART Goals and Rewards

I always stress to people embarking on a weight loss journey how important it is to set a weight loss goal. The same goes for activity. Statistically, your odds of success are greater if you have a goal in mind and write it down along with the steps you will take to achieve that goal. You likely have heard about SMART goals: S = specific, M = measurable, A = attainable, R = relevant, T = time-based. It’s what nurses do when they write up your care plan in the hospital. Say you want to loose weight, for example. You might set your first goal at 5% or 10% of your body weight. Both goals have significant beneficial effects to your health. So, maybe your S = you want to loose 8#, your M = 6 weeks from now, your A = 8# in 6 weeks is healthy and doable, your R = it makes good sense, and, your T = you have set your target date 6 weeks from now. There! Simple!

Next, write down some interventions. How are you going to achieve your SMART goal? Your interventions can be a simple list of things to move you toward your goal like drink 8-8oz glasses of water a day, walking 30 minutes a day, limiting fast food to 1 time per week. It’s whatever changes you are going to implement to achieve your SMART goal. Simple but very important to the process.

Don’t forget to set rewards for yourself along the way for staying on track with your weight loss journey! It’s important. Just like chocolate and sugar can light up the pleasure centers in your brain, so can non-food rewards. Your brain doesn’t know the difference, just that you are being rewarded. Your reward can be anything. Say for example, after every 5# loss your are going to reward yourself. A bubble bath, a new outfit, the sky’s the limit! Be creative!

So, set your SMART goal, your interventions (how are you going to get to your SMART goal) and, set your rewards at specific times along your journey! Then GO!

My own recap of Oprah’s “2020 VISION: YOUR LIFE IN FOCUS” tour.

On January 11th, 2020 I was lucky enough to go to see Oprah’s “2020 VISION: YOUR LIFE IN FOCUS” tour in Minneapolis! My husband, and best support person one could ever find, said he wanted to come to!

Right from the get go I was swept up in the empowering momentum and positive vibe of the 2020 Tour. To be honest, I didn’t even get up to use the ladies room even when I had to because I was afraid to miss even one tiny morsel of what was going on that day. I laughed, I cried, and I was overwhelmingly moved by the experience. I wondered how Oprah knew what is going on in my head. I could feel the layers of baggage and lies to myself peeling away like the skin on an onion.

We developed and signed our Wellness Contracts with Oprah before we left that day and I felt like I finally understood what having a purpose and living with intention meant. It was like I had been living in a seven room house and a door just opened to another room that I did not even know was there. An empty space just for me to do what ever I wanted with. I became free to create. I became free to be my best self.

An Introduction to the Author

I am a wife, mother, grandmother, registered nurse, nutritionist, who is 64 years old and feeling very alive. There is just so much I want to accomplish! I didn’t always feel this way.
